Every batch is hand-sorted on glass trays under daylight LEDs. We remove stones, twigs, damaged seeds and foreign matter. A 2-gram sample from each lot goes to our in-house lab for moisture and aflatoxin screening.
If your recipe calls for it, spices are slow-roasted on cast-iron tavas — chillies dark, coriander golden, cumin until the first wisp. We never use commercial dryers. Your masala will smell of roasted earth, not burnt machinery.
Granite stone mills, water-cooled, kept below 38°C throughout. Heat is the enemy of essential oils — every commercial grinder runs at 80–120°C and burns off the volatile aromatics. Ours doesn't.
Your ratios, our calibrated scale — accurate to 0.1 g on a 1 kg batch. Family recipes welcome (we'll preserve the original handwritten copy in our archive). Or pick from 32 house blends perfected over four generations.
